Perfect as a starter or a light lunch!<\/p>\n<p><em>&mdash; Serves 4<\/em><\/p>\n<p>*Items marked in <span class=\"ingredient\">green<\/span> are available from The Gourmet Corner.<\/p>\n<p><H3>Ingredients<\/H3><\/p>\n<p><em><\/p>\n<ul>\n<li>2 Tbs finely chopped shallot (one small)<\/li>\n<li>2 1\/2 Tbs <span class=\"ingredient\">champagne vinegar<\/span><\/li>\n<li>3\/4 teaspoon salt<\/li>\n<li>1\/4 teaspoon black pepper<\/li>\n<li>3 Tbs  <span class=\"ingredient\">extra-virgin olive oil<\/span><\/li>\n<li>4-6 small golden beets (approx 2&#8243; in diameter)<\/li>\n<li>6 cups watercress, long stems trimmed off<\/li>\n<li>2 oz. ricotta salata, very thinly sliced<\/li>\n<\/ul>\n<p><\/em><\/p>\n<p><H3>Beets<\/H3><\/p>\n<p>Trim and wash the beets. Steam whole over boiling water until easily pierced with a knife. Cool to room temperature, then slip off the skins and slice into small wedges. <\/p>\n<p><H3>Shallot Vinaigrette<\/H3><\/p>\n<p>Whisk together shallot, vinegar, salt, pepper and oil  in a small bowl. Set aside until needed.<\/p>\n<p><H3>Assembling the Salads<\/H3><\/p>\n<p>Put the beet wedges in a small bowl and toss with 2 tablespoons of the dressing until coated. <\/p>\n<p>Mound watercress onto four salad plates. Arrange the beets over the watercress, then scatter over them the ricotta salata.  <\/p>\n<p>Drizzle the remaining vinaigrette over the salads.
