Ebly Wheat with Carmelized Onions and Herbs

Ebly is made from whole durum wheat grains. Like pearl barley, it’s been partially cooked and hulled, then dried. As a result, it cooks in 10 minutes, versus the 40 minutes required to cook whole wheat berries. It has a light, deliciously wheaty taste and readily absorbs flavor from ingredients cooked with it. Here it’s accented with rich caramelized onions and a sprinkle fresh thyme sprigs. If you can get it (or grow it!) flowering thyme adds a lovely touch to the dish.

Ingredients


  • 1 medium yellow onion, coarsely chopped
  • 2 tbs Puget Olive Oil
  • 1 cup Ebly Tender Wheat
  • 1/2 tsp salt
  • 2 Tbs coarsely chopped fresh thyme, including flowers if blooming

Instructions

In a medium saute pan with a heavy bottom and a tight-fitting lid, heat 1 1/2 Tbs olive oil over medium heat. Add the onion and saute, stirring occasionally, until it is lightly browned, about 10 minutes. Turn the head down to the lowest setting, cover the pan, and cook 10-15 minutes. Remove the lid, being careful that accumulated droplets on the lid don’t fall back into the pan. Stir the onions well, spread them evenly over the pan surface, and put the lid back on. Cook for another 10-15 minutes, then stir again. Repeat cooking and stirring 2-3 more times until the onions are soft and deeply browned.

Note: if you’re short on time, you can speed the caramelization process by keeping the heat at medium low, the pan uncovered, and stirring more or less constantly.

After the onions are caramelized, add the Ebly to the pan with another 1/2 Tbs of oil and sautee over medium heat, stirring, just until some of the grains begin to color.

Pour 2 cups water over the wheat mixture and add the salt. Turn the heat to high, just until the Ebly comes to a brisk boil. At that point, turn the heat to simmer.

Simmer uncovered for 10 minutes. Once the Ebly is al dente, remove from heat and let stand 3 minutes to firm up.

Use kitchen shears to chop the thyme sprigs into small pieces. Scatter half of them over the Ebly and gently stir in. Scatter the remaining half of the thyme over the top of the Ebly and serve.

    I’m sorry, but I’m confused. Is the Gourmet Corner an online store? An in-person-only store? A rarely-updated bare-bones blog? Because you say you’ve got Ebly available, yet I can’t find any way at all to purchase it. I actually can’t even find any way to determine your location if, say, I wanted to buy it in person. I’ve been looking for a way to purchase this product in America for six years– I wish I were kidding about that– so if you could let me know how I’m supposed to contact you, that would be great.
